Task: Add access to project startup and internal service logs

The pilot showed that the state of the external DinD is insufficient for diagnosis: actual errors occurred inside Compose (N8N_ENCRYPTION_KEY, npm ci ECONNRESET). A standard way is needed to retrieve build/start/runtime logs of the project and specific internal services without manual docker exec. Link this to the overall observability task.
